Chocolate Womble Cake

After making custard we had quite a few egg-whites left over. Jan is such a womble that she could not bear to see this go to waste. After discovering that a blender doesn’t make such great meringue, the original plan of a pavlova morphed into a chocolate cake. The result was a uniquely textured and delicious cake .. something between a brownie and a sponge.
Here is the recipe …
Ingredients:
6 Egg whites
500g Caster sugar
100g Butter
3 tsp baking powder
Cocoa to taste.
Blend the egg whites with a pinch of salt for about 10 minutes in a blender on super-high until almost cooked from the heat. Then add 375g sugar and keep on blending like crazy .. hoping for satiny peaks and a meringue.
Blend butter and 125g sugar on their own in the blender.
Add the egg-white mix and blend together.
Add to cocoa to taste .. and blend.
Add 3 teaspoons baking powder.
Pour into a greased baking tin and add a smattering of chocolate chips
Cook in a moderate oven for about 25 minutes.
Serve with a dollop of cream.
